Apr. 30th, 2007 10:35 pmI've decided to give mead a go again, after 10-11 years. Got some of the good stuff, Ames Farms honey.
12# raw unfiltered honey
~5 gallons water
4.5 campden tablets crushed & dissolved, poured in and left 24 hours
1 activator pack Wyeast Dry Mead yeast pitched at 68F.
Original gravity for this batch is 1.092 (!)
Pulled off ~1 gallon to mix with 1# wild blueberries, 1 oz. grated ginger for experimental small batch.
I think I'll bottle some still and some sparkling. Check back in a couple months and we'll see how it tastes!
